Cake of Kings
Ingredients for 4 persons : 450 g of flour; 2 oranges; 20 g of fresh yeast; 3 eggs; Butter; 4 tablespoons of orange blossom water; 150 g of icing sugar; 1 lemon; 60 g of rolled almonds; 50 g caster sugar; 1.5 dl of milk; and salt.
Elaboration
In a bowl, mix the flour, icing sugar, zest of 1 orange and 1 lemon. Make a hole and add the lukewarm milk, two eggs and the yeast. Stir. Add 100 g of softened butter, a teaspoon of salt and the orange blossom. Mix and knead on a floured surface, let stand covered for 30-60 minutes (until doubled in size).
Brush a baking sheet with butter, turn the dough, make a hole in the center of the dough and stretch to form the roscón. Paint the surface with a beaten egg, sprinkle with almonds, decorate with slices of 1 orange.
Preheat the oven to 180°C, when the roscón has doubled in size, sprinkle with caster sugar and bake for 25 minutes.
Flowing Au Chocolat
Ingredients for 4 persons : 4 eggs; 110 g of sugar; 60 g of butter; 40 g of flour; and 260 g of dark chocolate.
Elaboration
Preheat the oven to 250°C. Put 200 g of chocolate and the butter in a bain-marie until they are melted. Withdraw.
Put the eggs, sugar and flour in a bowl. Beat in mixer for four minutes. Add the chocolate mixture and integrate with enveloping movements.
Grease the individual molds with butter and sprinkle with a little flour. Pour the mixture into the molds, filling them to 1/3 of their capacity. Place an ounce of chocolate in each mold, then cover with the rest of the mixture. Bake for 7-8 minutes and serve immediately.
liqueur panna cotta
Ingredients for 4 persons : 2.5 dl whipping cream, 1.5 dl liquid cream, 250 g mascarpone, 1.5 dl Baileys type liqueur, 40 g icing sugar, vanilla extract. 10 g powdered gelatin, dark chocolate couverture.
Elaboration
Put a saucepan on the fire with the whipped cream, the mascarpone, the icing sugar, a few drops of vanilla extract and the Baileys. Keep on low heat for five minutes, stirring all the time and without letting the mixture boil.
Dissolve the gelatin in the liquid cream and add everything to the saucepan. Stir for a minute and remove from heat. Pour the mixture into a silicone mold and leave it in the refrigerator for three to four hours.
Grate a few ounces of chocolate couverture. Unmold the panna cotta and serve with the grated chocolate.
Cocktails and sweet gifts
Prepare a blueberry mojito to surprise: crush 80 g of blueberries with 4 tablespoons of sugar syrup. Mix with crushed mint leaves and 50 g of white rum. Shake in a cocktail shaker with ice and fill glasses with sparkling water. To give to your guests, prepare chocolate muffins and wrap them.
