Pancakes…we see them in TV shows and we ask for them when we have the luxury of having breakfast outside but we seem to have a hard time getting started. And it is that we associate them yes or yes with sweets and breakfast and, let’s be honest, most of the time we get up without having the time or the inclination to prepare them.
What happens is that we can also make savory pancakes which can serve as a healthy dinner and sweet ones which are the ideal breakfast for the weekend but also as a snack on one of those cold rainy days and even make the dough the night before to start a good morning weekend, for example. These are our favorite pancake recipes. Try them, you will love them!
Pancake recipes (sweet and savory) that you have to try yes or yes
1. Pumpkin pancakes with honey
Pumpkin is a very good alternative for reduce the amount of flour and achieve a silky texture in sweet dishes. It is widely used to make healthy cookies and now also to make pancakes. If you have leftover cooked pumpkin from making a dish (you can take advantage of it and make a larger amount when making a cream, for example) this recipe won’t take long to prepare. Once the dough is made, all you have to do is make them in a buttered mold and serve them, warm, with honey and raspberries.
2. Pancakes with fruit and whipped cream
Many times we think that eating pancakes is not too healthy and of course, if we always accompany them with whipped cream and super sweet syrups, well no. But we always have the alternative of accompanying them with different fruits (and the day when we want to treat ourselves by adding cream). This recipe is traditional. You can serve it with any type of fruit you can think of, and it also has a drizzle of honey. How delicious are pancakes with honey!
3. Walnut Apple Pancakes
We saved this recipe for one of those typical winter afternoons. Mantita, peli and apple pancakes with cinnamon and nuts. Is there a better plan? They are very easy to make the recipe is the usual pancake recipe, with flour, eggs, milk… but between galette and galette you can add a layer of apple wedges sautéed in butter and a few lightly caramelized walnuts. Let it rain now!
4. Rice cakes and cod
Although we are greedy by nature, we also love savory pancakes. They are a perfect way to make useful recipes with, for example, leftover cooked rice or desalted cod. Just add some sautéed vegetables to the equation, toss with breadcrumbs and a beaten egg and into the pan.
5. Potato and Spinach Pancakes
If the youngest in the house (and the occasional adult) eating spinach or any other vegetable is torture, try making them into pancakes. The rounded shape usually catches their attention and makes them forget what they have inside, especially if they are served with a little sauce. These are prepared by making a mass of boiled potatoes and filling it with sautéed spinach. Then they are floured and fried. delicious.
6. Vegetable pancakes with yogurt sauce
The yogurt sauce is an ideal accompaniment for this and other savory pancakes that one would eat in cold weather. This recipe is perfect for the weekend, When there are leftover veggies left in the fridge, they’re great for stir-frying and nothing else. Here we mixed courgettes, carrots and onions and after turning them over in the pan we added them to a batter made from egg, milk and flour. We curd them and serve them with the lemon and cumin yoghurt sauce which gives it a touch… Addictive!
