This typical dish from the Marina Baixa region is part of the first gastronomic map of the Valencian Community prepared by the University of Alicante (AU) in which 34 traditional recipes were compiled updated by the recommendations of nutritionists.

● 1 kilo of white sweet potato

● 750 grams of sugar

● A pinch of cinnamon

Preparation of jam

  1. To make sweet potato jam, the first step is to boil unpeeled sweet potatoes. Then let them cool before peeling them. Once peeled, mash them with a fork until a paste forms.

  2. Put the sweet potato paste in a saucepan over low heat and add the sugar and cinnamon, stirring constantly so that it does not stick. Maintain the heat for half an hour and set aside. Put the dough in the refrigerator while we make the rest of the preparations.

Step 2: make the dough for the pastisos

Ingredients for the dough

● A glass of extra virgin olive oil

● A glass of sweet anise

● 50 grams of sugar

● About 1 kilo of flour or the flour that admits

Preparation of the dough

  1. Put the anise and the oil in a saucepan on the fire and leave to heat without boiling.

  2. Remove from the heat and add the sugar and the flour little by little, until you obtain a homogeneous consistency allowing correct kneading.

Step 3: Making the pastisos

  1. Place the dough on a sheet of parchment paper and knead with a rolling pin to give it a rounded shape.

  2. Press the dough with a glass to make small circles of dough. Remove excess dough.

  3. Place a tablespoon of sweet potato jam in the center of the dough circle.

  4. Fold the dough over itself as if it were a dumpling

  5. Place the cakes on the pre-greased baking sheet and put them in the preheated oven for about 25 minutes at 200 degrees.

To obtain lighter and lower calorie sweets, you can reduce the amount of sugar in the recipe and opt for wholemeal flour instead of normal.
