1. Prepare the broth:

Bring chicken carcasses and bones to a boil in a pot (also accepts pork or beef bones). After the first boil, remove them and change the water (this will remove impurities). Finely chop several leaves of Chinese cabbage or normal cabbage (only the soft part of the leaf, without its stem). Thinly slice two Chinese chives or the necks of several regular chives. Mix the cabbage and spring onion with the ground pork in a bowl. Chop the peeled shrimp and add them to the mixture, along with a tablespoon of cornstarch and a peeled and finely chopped clove of garlic. Grate ginger for flavor and add a tablespoon of soy sauce, a teaspoon of sesame oil, salt and black pepper. Mix everything well, that there is a compact mass.

3. Prepare the wontons:

Lay the wonton wrapper on a flat surface. Moisten its sides with a little water (use your fingers). Put the filling in the center (do not load them too much) and close it in the shape of a triangle.
