Tacos are one of the pillars of Mexican gastronomy; there are stews, vegetables, potatoes, pork rinds and a wide variety, but those that can never, really never run out are the Tacos al Pastor. I think since we were little we grew up with them on our tables, at least from time to time, that’s why today we brought an alternative to these taquitos with some rich mushrooms al pastor.

As we grow older, we change our eating habits. We prefer certain ingredients to others and we even meddle in practices that we consider beneficial for our health (or even for our ethics, but that is the subject of another note) for example: vegetarianism. And when we grew up eating taquitos al pastor, it can be hard to leave them altogether and forget their flavor. So we better share this substitute which will not envy any other recipe, it is delicious and easy to make.

Mushrooms will not only help you in your process of reducing meat consumption or diversifying the vegetables and ingredients you want to consume.   • Place the mushrooms in a bowl and add the marinade so that it covers everything perfectly.

  • Let them marinate for 30 minutes.

  • While it rests, julienne the remaining onion.

  • In a frying pan with hot oil, add the onions that we have just split and fry them until they are clear.

  • Add the mushrooms to the skillet and sauté for about 10 minutes until tender and the marinade has reduced slightly.

  • Remove from heat and serve. You can accompany with pineapple, coriander, onion and lemon.

  • But if you prefer, you can eat them like that, they will be delicious.
