1 kg salmon loin without bones or skin
1 or 2 grated beets
500g coarse salt
400g of sugar
We wash the beets and grate them. Then, in a bowl, mix the beetroot with salt, sugar and dill to taste.
In a chosen source or tupperware we put a layer of the mixture and on top we place the salmon with the skin on top (it should not be in contact with salt and sugar). Cover the salmon, on the sides, with the rest of the mixture.
Cover with transparent film or a lid and leave in the refrigerator for 24 to 36 hours.
Once the time has elapsed, we take the salmon out, wash it very well under the tap and dry it with paper towel.
