You only need two ingredients to prepare these skewers. This, yes, it is important that the shrimp and bacon are of high quality. Think that the cooking will be minimal, so a quality raw material is essential.
Karlos Arguiñano accompanies the shrimp skewers with a few lettuce leaves and a homemade lactonese, which is an egg-free mayonnaise. Instead of this ingredient, the chef uses milk, which emulsifies the sauce. The chef prepares the lactone with a little garlic, but you can skip this ingredient if you don’t like it.

Karlos Arguiñano’s simplest appetizer
Shrimp and bacon skewer by Karlos Arguiñano
for 4 people
- 16 prawns
- 8 thin slices of bacon
- 6 tablespoons of milk
- ½ lemon
- 1 small clove of garlic
- 100 grams of mixed lettuce leaves
- Extra virgin olive oil
Step by step
Prepare the lactone
Peel and chop a small garlic and put it in the blender glass. Add the salt, lemon juice and milk and begin to emulsify the sauce as you drizzle the oil.

Cut each slice of bacon in half. Shell the prawns and remove the intestines (reserve the skins and heads to prepare a fish stock). Wrap each shrimp in a slice of bacon, rolling it inside. Thread two shrimp onto each wooden skewer.
cook the skewers
Drizzle the skewers with extra virgin olive oil. Put a griddle on the stove and heat it up. Cook the skewers for 3 minutes (half on one side, half on the other) and remove from the grill.
plate and serve
Serve two skewers for each guest, accompanied by a salad of lettuce seasoned with oil, salt and vinegar and a tablespoon of lactonese. Serve the rest of the sauce in a separate bowl.
