The stage fright, the early morning, the shopping, the surprises, the smiles… And, when everyone has already opened their presents, the desire to have a good breakfast together! To share a sweet moment in these days with the family, Roberto Bosquet, Chef Bosquet, offers a delicious and healthy alternative to the traditional Roscón: almond biscuits or cupcakes that usually surprise with their texture and flavor, especially if accompanied of a delicious homemade hot chocolate. .
The combination of ingredients in this recipe not only provides delicious flavor but also valuable nutrients. On the one hand, almonds are rich in unsaturated fatty acids, minerals such as phosphorus, potassium, magnesium, calcium, iron and vitamins A, E, B1 and B-2.
In addition, thanks to their high protein and dietary fiber content, they are energetic and satiating. Dates, which provide body and sugar, also provide a high energy content which also includes fiber, tryptophan and little fat. It also helps prevent certain heart diseases and improves memory and other cognitive processes. It has also been shown to promote the production of endorphins, tryptophan or phenylethylamine, all of which are involved in improving mood.
We start by adding the almond flour, milk (or vegetable drink), eggs, extra virgin olive oil (EVOO), baking powder and dates (previously soaked in hot water for 15 minutes and drained).
Once the ingredients are well crushed, distribute the mixture in cookie molds (cupcakes or muffins) previously greased with a little olive oil.
Put the mold in the oven and cook for 25-30 minutes (depending on the power of the oven) at a temperature of 180ºC (preheated) with heat above and below and without air. Unmold and you can now enjoy these cookies with a good glass of hot chocolate.
To prepare homemade chocolate, remember that you need to mix all the ingredients and grind them until it is a fine powder. You reserve it in a jar to be able to consume it whenever you want. Just mix one or two tablespoons of the mixture with milk or a vegetable drink, bring to a boil without stopping, and you’re done.
